Innovative Foodie Creates Squeezable Sauerkraut

Tracy Lundberg’s Sconnie Foods Squeezable Sauerkraut landed on grocery store shelves in the Chippewa Valley area in early 2013. Seeing the potential for sauerkraut that promised “less waste, less mess, less hassle,” Lundberg applied science and ingenuity to create squeezable sauerkraut.

Once she had developed a product that preserved the crunch and flavor of the kraut while flowing smoothly, Lundberg took her idea to Jim Mishefske, then director of the SBDC at UW-Eau Claire.

“Jim provided me with helpful tips on doing market research and laid out the steps to launching a new food product,” said Lundberg. 


The squeezable sauerkraut won the $5,000 grand prize in the 2012 Idea Challenge competition, a contest run by the Eau Claire Area Economic Development Corporation.


SBDC consultant Luke Kempen also assisted Lundberg with financial and sales projections.


“Luke has considerable knowledge and advice based on his own experience as a small business owner and can relate with what I’m going through,” said Lundberg.


Lundberg has a number of other products in the works including a Bavarian-style squeezable sauerkraut. She expects her squeezable condiments to be sold online and in stores throughout Wisconsin and Minnesota in 2014.

As Lundberg grows her unique food business, she considers the SBDC a valuable resource. “If I ever have a question or need to do some brainstorming, I just call, and they are more than happy to talk with me, offer me suggestions and point me to who might be able to help.”
